Here is an idea from a while back.
Gorg Ratbone, Lord of the Rats
A once cowardly scavenger, now a mighty ruler of his rat followers. He died long ago, but is now a undead creature.
He has armor crafted from the bones of his enemies, and rides a gigantic mutant zombie rat. He wields a flail made of a man's spinal cord and carries bone shivs for those that get to close.
He lives in the dungeon near the Gladiator Pits, and is a mighty foe. Beware his presence.

For the Hunt one of the variations for the centaur should be the Cerberus. A quad bike base with three bodies that breath fire out of their heads. hawt.
